Make the base

  1. Add the calf's-feet jelly to the mixture and stir well in a large jug.

  2. Pour in the boiling water and set the jug on the hob for 20 minutes.

  3. Strain the liquid from the jug into a large bowl and stir in the other ingredients one at a time.

What each ingredient does

Calf's-feet jelly
Adds body and a gently gelled texture to the punch.
Seville oranges
Provide bitter-sharp citrus aroma and acidity from their peel and juice.
Lemons
Supply the main acidity and fresh citrus flavor, with peel oils adding aroma.
Cognac brandy
Adds warming depth and aromatic complexity to the spirit base.
Old rum
Contributes rich, sweet-toned flavor and body to the spirit base.
Sherry
Adds nutty, dried-fruit notes and a little extra depth.

The step that matters

Heating the jelly-and-juice mixture. Hot water should be poured in while the jug is set on the hob for only as long as stated, since overheating can dull the citrus aroma and break down the gelatin's setting power. Stir fully so the jelly dissolves evenly before straining.
