What each ingredient does

Cucumber
Forms the body of the sauce, giving it its fresh, mild flavor and smooth texture once cooked and sieved.
Butter
Adds richness and carries the flavors of the herbs and spices through the cooked cucumber.
Melted butter or creamy béchamel
Adds body and a smooth, creamy texture to the finished sauce.

The step that matters

Cook until the cucumber is soft. Cucumber is mostly water, so it must cook long enough to soften fully; otherwise the sieved sauce will be grainy and watery rather than smooth.
