What each ingredient does

Onions
Soften and add savoury body and a little sweetness as they cook down into the sauce.
Tomato purée
Adds concentrated tomato flavour, colour and body to the sauce.
Brown sauce
Provides the rich, savoury base and body that the sauce is built on.
Tarragon vinegar
Adds acidity that brightens the sauce and balances its richness.
Sultana raisins
Add mild sweetness and soft, plump texture as they simmer.

The step that matters

Simmer until the onions and raisins are tender. Onions and raisins need enough time in the simmering liquid to soften fully. Stopping early leaves a coarse texture and a sharper, less rounded flavour in the finished sauce.

Swap the raisin
