Sweetbreads, Fried

Ingredients

Directions

  1. Wash the sweetbreads in tepid water, changing the water as needed, then soak in cold water for a while.

  2. Blanch in cold water with a little salt and lemon juice, bring to a boil, then rinse in cold water.

  3. If frying, cook in stock until nearly done, about 30 minutes, depending on size.

  4. Press between two flat tins with weights until cold.

  5. Coat the cooled sweetbreads in flour or dip in egg and breadcrumbs seasoned with salt, pepper, and optional cheese or herbs.

  6. Heat enough cooking fat in a pan until very hot to cover the sweetbreads.

  7. Fry until golden brown, then serve garnished with fried parsley and lemon.
