Why it works: Tarragon and chervil match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 824 recipes mention both. Both carry estragole, which smells anise, licorice. The science ↓

Veal, Roasted

Ingredients

Directions

Marinate

  1. Jar the veal and marinate it in oil, sliced onion, tarragon, chervil, powdered mace, and vinegar equal to the oil for six hours.

  2. Turn and baste the veal occasionally during marination.

Roast and serve

  1. Cover the veal with buttered paper and roast, basting with the marinade.

  2. Remove the paper to allow the meat to brown.

  3. Make gravy in the pan and pour it around the meat before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Is the main meat that is marinated, roasted and served.
Oil
Carries the herbs and onion in the marinade and keeps the meat moist.
Vinegar
Adds acidity to the marinade, which helps tenderize the surface of the meat.
Sliced onion
Flavors the marinade and contributes aroma during roasting.

The step that matters

Removing the paper to brown the meat. Buttered paper traps moisture and slows surface browning while the veal roasts. Removing it late lets the surface dry and brown through the Maillard reaction, which builds color and flavor.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (veal, onion, tarragon, chervil, vinegar):

  1. Capersbetter flavor fit
  2. Parsleybetter flavor fit
  3. Thymebetter flavor fit
  4. Macethe original

Fit is the average pairing score against veal, onion, tarragon, chervil, vinegar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
