Salted Meats

Ingredients

Directions

  1. Prepare the brawn and let it cool until set.

  2. Coat the brawn with rich glaze or aspic jelly.

  3. Cut oval pieces from boiled egg whites for eyes and create a hole in the center.

  4. Fill the hole with aspic and place a piece of truffle or pickled walnut skin inside.

  5. Use Brazil nuts for tusks; crack, boil, and remove the skin, then insert them upright near the mouth.

  6. Decorate with aspic jelly blocks, chopped jelly, and arrange parsley, lemons, and fancy shapes around the dish.

  7. Pipe lard in decorative shapes on the dish, using both white and colored lard.
