Salted Meats

Ingredients

Directions

  1. Ensure the meat is fresh and remove any blood and moisture.

  2. Hang the meat for a day or two in cool weather, avoiding drying or tainting.

  3. Rub the brine thoroughly into every part of the meat, including between muscles and any holes.

  4. Examine the meat regularly; cut off any moldy parts and apply fresh salt.

  5. If the meat is slimy, rub it with dry, warm salt and let it drain before salting.
