Ingredients

Directions

  1. Chop the white meat of the cooked chicken or pass it through a mincer.

  2. Simmer the bones with lemon peel, a mushroom, herbs, and peppercorns to make gravy.

  3. Strain the gravy and add half as much minced chicken as there is stock.

  4. For each quarter pound of chicken, add 1 tablespoon of minced ham.

  5. Enrich with cream and thicken with white roux until it drops from the spoon.

  6. Season with mace, nutmeg, lemon juice, or flavored vinegar as desired.

  7. For richer patties, mix in the yolks of 2 eggs or use a rich white sauce.

  8. For plainer patties, mix the chicken with a little white or brown sauce.
