Ingredients

Directions

The book says “a good oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. Line a pie dish with puff pastry.

  3. Place a slice of veal at the bottom and season with salt, pepper, and mace or nutmeg.

  4. Add a slice of lean ham on top.

  5. Carefully pluck the woodcocks, season them, and do not open them.

  6. Cover the birds with thin slices of ham or bacon.

  7. Fill any gaps with slices or quarters of hard‑boiled eggs.

  8. Pour strong stock over the filling until it is covered.

Cover and bake

  1. Cover and decorate the crust, then glaze it.

  2. Bake the pie for 1 hour and 15 minutes to 1 hour and 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms the crisp, flaky crust that encloses the filling and browns in the oven.
Woodcocks
Provide the main meat, which cooks whole inside the pie so it stays moist.
Veal
Adds savory meat flavor and body to the base layer of the filling.
Hard-boiled eggs
Fill the gaps and add a firm, mild richness to the filling.
Strong stock
Moistens the filling and turns to a savory gravy as the pie bakes.
