Siberian Crabs, Preserved

Ingredients

Directions

Prepare the fruit

  1. Wipe the fruit with a clean cloth and prick each fruit with a needle.

Make the syrup

  1. Simmer the cloves and ginger in the water until flavored.

  2. Boil the flavored water and sugar together until dissolved.

  3. Pour the hot syrup over the prepared fruit in jars.

  4. Ensure the fruit is submerged in the syrup and leave jars uncovered.

Re-syrup and check

  1. The next day, pour the contents into a colander and return the syrup to the saucepan.

  2. Add more sugar to thicken the syrup, boil, and skim it.

  3. Pour the hot syrup back over the fruit and keep jars open.

  4. Check for mold or fermentation after a week and re-boil the syrup if necessary.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Siberian crabs
The fruit is the main ingredient, preserved whole in the sugar syrup.
Lump sugar
Sugar preserves the fruit and thickens the syrup, helping to inhibit spoilage.

The step that matters

Keeping the fruit submerged in the syrup. Fruit left exposed above the syrup can grow mold or ferment. Keeping every piece covered by syrup helps the fruit stay preserved during the week of checks.

Swap the clove

How well each one fits the dish's main ingredients (sugar, crab, ginger):

  1. Cinnamonfits better
  2. Turmericfits about as well
  3. Nutmegfits about as well
  4. Clovethe original

Fit is the average pairing score against sugar, crab, ginger. Candidates are from the same food group and used in at least 100 recipes.
