What each ingredient does

Blackberry juice
Provides the main fruit flavour, colour and liquid base of the liqueur.
Lump sugar
Adds sweetness and body, and helps balance the tartness of the juice.
Brandy
Adds alcohol, which preserves the liqueur and carries its aroma.
Allspice berries
Contribute warm, aromatic spice flavour that infuses into the juice during simmering.

The step that matters

Simmer for 20 minutes, skimming often. Boiling extracts the spices slowly into the juice, and skimming removes foam and impurities that would cloud the liqueur and spoil its clarity.
