Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Scallops in Shells

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Trim the scallops by removing the beards and black parts.

  2. Clean 6 shells and butter them, then sprinkle a few breadcrumbs inside each shell.

Assemble

  1. Place 3 scallops in each shell, season with cayenne, chopped parsley, and a few drops of lemon juice.

  2. Mix a little pepper and salt with the breadcrumbs, then cover the scallops with white sauce.

  3. Sprinkle more breadcrumbs on top and add small pieces of butter.

Bake

  1. Bake at 400°F (200°C) for about 20 minutes.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Scallops
Form the main body of the dish and become tender and delicate when cooked gently.
Breadcrumbs
Form a crisp, golden topping and absorb moisture from the sauce and butter.
Butter
Adds richness and helps the breadcrumb topping brown in the oven.
White sauce
Provides a creamy moisture layer that keeps the scallops from drying out.
Lemon juice
Adds acidity that brightens the rich sauce and butter.

The step that matters

Bake at 400°F (200°C) for about 20 minutes. Scallops turn firm and rubbery when overcooked, so the bake should be timed carefully. Pull them once the topping is golden and the scallops just turn opaque.
