What each ingredient does

Skate
Is the main protein, becoming flaky and tender when gently simmered.
Vinegar
Adds acidity that brightens the mild flavour of the fish during poaching.
Caper sauce
Adds a sharp, buttery counterpoint that complements the delicate poached fish.

The step that matters

Simmer the skate until tender. Simmering gently keeps the liquid below a hard boil, so the delicate flesh cooks evenly and stays moist instead of breaking apart or toughening.

Swap the onion

How well each one fits the dish's main ingredients (vinegar, pepper, parsley, thyme, fish, sauce):

  1. Shallotfits better
  2. Capsicumfits better
  3. Mustardfits better
  4. Onionthe original

Fit is the average pairing score against vinegar, pepper, parsley, thyme, fish, sauce. Candidates are from the same food group and used in at least 100 recipes.
