A Good Boiled Dinner

Ingredients

Directions

Prepare

  1. Wash the meat well and place it in a pot with enough boiling water to just cover it.

  2. Place a saucer upside down at the bottom of the pot to prevent the meat from burning.

  3. Soak the peeled potatoes and turnips in cold water for 30 minutes.

Cook

  1. Once boiling, reduce heat to a simmer and cook until the meat is almost tender.

  2. Skim the surface of the water before adding the cabbage, turnips, and potatoes.

  3. Boil all ingredients together until thoroughly cooked.

  4. Add a little salt before removing from heat.

Serve

  1. Transfer the vegetables to separate dishes.

  2. Transfer the meat.

  3. If there is any juice left in the pot, pour it over the cabbage.

  4. Boil the cabbage for 45 minutes.

  5. Boil the turnips and potatoes for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Meat
Provides the main savory flavor and protein, and its juices enrich the broth.
Cabbage
Adds mild sweetness and body as it softens during long simmering.
Potatoes
Absorb broth flavor and turn soft and starchy, giving the dish body.
Turnips
Contribute a mildly sweet, earthy flavor and tender texture when simmered.

The step that matters

Simmer the meat gently, not at a rolling boil. Vigorous boiling toughens meat proteins and can make the broth cloudy, while a gentle simmer lets connective tissue break down slowly for tender meat.

Swap the cabbage

How well each one fits the dish's main ingredients (meat, turnip, potato):

  1. Leekfits better
  2. Asparagusfits better
  3. Parsnipfits better
  4. Cabbagethe original

Fit is the average pairing score against meat, turnip, potato. Candidates are from the same food group and used in at least 100 recipes.
