Graham Bread

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, combine the unbolted flour and baking soda.

  3. In another bowl, mix the milk and molasses.

Make and bake the loaf

  1. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.

  2. Pour the batter into a greased loaf pan.

  3. Bake for about 45-50 minutes or until a toothpick inserted in the center comes out clean.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Flour and milk barely smell alike, yet cooks put them together in 78,219 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Unbolted flour
Provides the main structure and bulk of the bread, including the bran and germ.
Milk
Adds moisture and helps form a soft, tender batter.
Molasses
Adds sweetness, dark color and a rich flavor to the crumb.
Baking soda
Reacts with the molasses acid to produce gas that lifts the bread.

The step that matters

Stirring the wet into the dry. Stirring just until combined keeps gluten development limited, so the loaf stays tender rather than tough and dense.
