Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Butter a pudding dish and line the bottom and sides with slices of stale sponge cake.

Assemble and bake

  1. Layer the pineapple slices in the dish, sprinkling sugar between each layer until nearly full.

  2. Pour ½ cup of water over the layers.

  3. Cover the top with slices of cake dipped in cold water.

  4. Cover the dish with a buttered plate and bake for two hours.

What each ingredient does

Stale sponge cake
Forms the structure of the pudding, soaking up juices so it holds its shape when baked.
Pineapple
Supplies the main flavor and moisture as it softens and releases juice during baking.
Sugar
Adds sweetness and helps draw out and balance the pineapple's acidity.
