The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce as they cook and give it a rich, smooth body.
Sugar
Sweetens the sauce and, when boiled, forms the syrup base for the custard.
Orange juice
Adds bright citrus acidity and flavour to the sauce.
Orange rind
Contributes aromatic orange oils for fragrance and flavour.

The step that matters

Pour the egg yolks into the boiling mixture. Egg yolks scramble if they meet very hot liquid too quickly or are cooked too hard. Beating continuously while they cook keeps the sauce smooth and lets the yolk proteins thicken it evenly.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
