Fruit Creams

Ingredients

Directions

Make the custard

  1. Prepare a quart of rich boiled custard, flavor with vanilla, and let it cool.

Mix and freeze

  1. Mix the cooled custard with a quart of grated pineapple or mashed peaches.

  2. Add enough sugar to compensate for the loss in freezing.

  3. Freeze the mixture, stirring in a pint of whipped cream when it begins to set.

Portion and set

  1. Partly fill little paper cases with the mixture and smooth the tops.

  2. Place the cases in a cleaned and dried freezer, embedding them in ice for several hours.

What each ingredient does

Eggs (in the method)
Thicken the custard base when cooked, giving it body and a smooth, rich texture.
Whipped cream
Adds fat and air, making the frozen texture lighter and creamier.
Sugar
Sweetens the mixture and lowers its freezing point, keeping it soft and scoopable.
Grated pineapple or mashed peaches
Adds fruit flavor and moisture, with acidity that brightens the sweet custard.

The step that matters

Adding the whipped cream when the mixture begins to set. If the mixture is too liquid, the cream sinks and deflates; if it has frozen solid, the cream cannot blend in evenly. Stirring at the first sign of setting keeps the cream airy and distributed through the ice cream.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Pineapplethe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
