Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells as it soaks and cooks, thickening the milk into a creamy, pudding-like body.
Eggs
Set when stirred into hot custard, adding richness and body to the mixture.
Milk
Forms the base of the custard, providing liquid that the tapioca thickens.
Sugar
Adds sweetness and softens the frozen texture.
Whipped cream
Folded in near freezing to add lightness and a smoother, airier texture.

The step that matters

Stir in the eggs off the heat. Eggs can curdle or scramble if they meet very hot liquid too quickly. Stirring them in gently and removing the pot from heat helps the custard thicken smoothly without lumps.
