Ingredients

Directions

  1. Select smooth, well-shaped apple tomatoes.

  2. Scald and carefully skin the tomatoes.

  3. Remove the stem with a penknife without cutting the tomato.

  4. Place the tomatoes in glass jars, alternating stem and blossom ends.

  5. Pour the juice from the peeled tomatoes over them until nearly full.

  6. Submerge the jars in a kettle of cold water.

  7. Cook until the tomatoes are hot throughout.

  8. Seal the jars, then remove the cover after five minutes to let gas escape.

  9. Fill with juice and seal again, ensuring jars are full to the cover.
