Why it works: Burdock and dock share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 22 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yeast
Ferments the sugars, producing carbonation and the beer's fizz.
Molasses or white sugar
Provides the fermentable sugar that yeast converts into alcohol and carbonation.
Hops
Adds bitterness and aroma that balance the sweetness of the brew.
Sarsaparilla root
Contributes the characteristic root flavour of the beer.

The step that matters

Strain the mixture while hot, then wait for it to cool before adding the oils. Oils of spruce and sassafras are volatile and can be driven off by excess heat, so adding them only once the mixture is cool enough to handle keeps their aroma in the finished brew.
