Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's foot
Provides collagen that dissolves into the broth and sets it as gelatin when cooled.
Veal
Adds meat flavor and some collagen to the broth as it simmers.

The step that matters

Boil slowly for 5 hours. A gentle simmer extracts collagen from the bones and connective tissue without clouding the liquid. A hard boil breaks up the meat and makes the stock cloudy and greasy.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (veal, pepper, nutmeg):

  1. Capsicumfits better
  2. Carrotfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against veal, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
