Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Confectioners' sugar
Provides the sweet bulk and, with the egg white, forms the firm paste that holds its shape.
Egg white
Binds the sugar into a stiff, cohesive paste.

The step that matters

Mixing the stiff paste. Confectioners' sugar must be fully worked into the egg white and water to form an even, stiff paste. Too much liquid makes the mixture sticky and hard to shape, while too little leaves dry, crumbly pockets of sugar.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, egg, meat):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Lemonfits less well
  4. Figfits less well

Fit is the average pairing score against sugar, egg, meat. Candidates are from the same food group and used in at least 100 recipes.
