What each ingredient does

Sweetbreads or mutton or veal
Forms the meaty body of the atlets, becoming tender and firm as it cooks.
Blanched oysters
Add a delicate briny flavor and soft, juicy texture to the filling.
Fresh butter
Carries the curry powder's flavor and keeps the filling moist as it cooks.
Curry powder
Provides the warm, spiced aroma that defines the dish.
Fine breadcrumbs
Form a crisp, golden coating that browns under the broiler.

The step that matters

Broil over a clear fire until browned. Breadcrumbs brown quickly from direct heat, so the coating can scorch before the filling is heated through. Watching the color closely helps the crust turn golden while the interior stays juicy.
