What each ingredient does

Sweetbreads or mutton/veal slices
Form the main body of the skewers, providing the meaty, tender bite.
Blanched oysters
Add a briny, savoury flavour and soft texture to the filling.
Fresh butter
Cooks the meat gently and carries the curry flavour through the filling.
Curry powder
Gives the filling its spiced, aromatic flavour.
Breadcrumbs
Form a crisp, browned coating when broiled.

The step that matters

Broil over a clear fire until browned. Breadcrumbs brown quickly and can scorch before the meat and oysters heat through. A steady, clear heat and watching the colour help the coating crisp while the inside stays moist.
