Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle
Provides the meat and gelatin that bind the shredded pieces into a firm loaf when chilled.
Hard boiled eggs
Add firm texture and visual contrast in the sliced layers.

The step that matters

Pressing under a weight while chilling. The weight squeezes the layers together so they set as one solid block. Chilling long enough lets the gelatin from the cooking liquid firm up, so the loaf holds its shape when sliced.

Swap the thyme

How well each one fits the dish's main ingredients (veal, pepper, egg):

  1. Parsleyfits better
  2. Sagefits better
  3. Tarragonfits better
  4. Thymethe original

Fit is the average pairing score against veal, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
