Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Soak the tapioca overnight in enough milk to cover it.

  2. Heat the milk in a saucepan.

  3. Beat the egg yolks with sugar in a bowl.

Make the pudding

  1. Add the beaten yolks to the heated milk and stir in the soaked tapioca.

  2. Cook the mixture until it thickens.

  3. Add flavoring as desired.

Top and bake

  1. Beat the egg whites until stiff peaks form.

  2. Sweeten the egg whites and spread them on top of the tapioca mixture.

  3. Sprinkle coconut on top and brown in a 350°F (175°C) oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during soaking and cooking, thickening the milk into a pudding body.
Egg yolks
Thicken the custard base and add richness as they cook with the milk.
Egg whites
Whipped and sweetened, they form a light meringue topping that browns in the oven.
Milk
Forms the liquid base that the tapioca swells in and the yolks thicken.

The step that matters

Cooking the mixture until it thickens. Egg yolks can curdle or scramble if overheated, so cook gently while stirring. Tapioca needs enough heat to fully swell and thicken the milk. Stop once the pudding coats a spoon.

Swap the coconut

How well each one fits the dish's main ingredients (milk, egg, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Coconutthe original

Fit is the average pairing score against milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
