White Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and sugar together for 15 minutes.

  2. Add the almond flavoring and then the milk, mixing thoroughly.

  3. Sift the flour twice, measure it, and then add the baking powder, sifting again.

  4. Stir in one-third of the flour and one-third of the beaten egg whites, repeating until all flour and egg whites are incorporated.

  5. Fold the mixture in lightly and bake in a moderate oven at 350°F (175°C).

Bake

  1. Protect the top by placing a pan on the oven grate.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and give the cake a tender, rich crumb.
Flour
Provides the structure that holds the cake together as it bakes.
Egg whites
Beaten to foam, they add lift and a light, airy structure.
Granulated sugar
Creamed with butter to aid aeration and add sweetness and browning.
Baking powder
Releases gas during baking, helping the cake rise.

The step that matters

Folding in the flour and egg whites. Alternating flour and beaten egg whites in small additions, then folding gently, keeps the batter light. Overmixing develops gluten and knocks out the air, leading to a dense, tough cake.
