Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oranges
Provide the main citrus juice, giving the ice its flavour and bright colour.
Lemons
Add acidity that balances the sweetness and sharpens the citrus flavour.
Sugar
Sweetens the mixture and lowers its freezing point, keeping the ice soft and scoopable.
Cream
Adds fat and air, making the frozen texture smoother and creamier.

The step that matters

Stir in the cream at half frozen. If the mixture is fully frozen, the whipped cream will not blend in evenly and the texture becomes icy. Stirring while it is partly frozen folds the cream through the slush so the ice stays light and smooth.

Swap the orange

How well each one fits the dish's main ingredients (sugar, lemon, cream):

  1. Vanillafits about as well
  2. Orangethe original
  3. Raspberryfits about as well
  4. Limefits less well

Fit is the average pairing score against sugar, lemon, cream. Candidates are from the same food group and used in at least 100 recipes.
