Roast Veal

Ingredients

Directions

The book says “a slow oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

Prepare the veal

  1. If using a leg, remove the bone and fill the space with dressing.

  2. If using a loin, tuck dressing under the flap and keep some for browning in the pan.

  3. Dredge the veal with salt and flour.

Roast and serve

  1. Roast in a slow oven (300°F/150°C) for four hours, basting as necessary.

  2. Decorate with parsley before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the roast, with its lean meat cooking slowly to tenderness.
Flour
Coats the surface so it browns during roasting and helps thicken the pan juices.
Dressing
Fills the cavity and adds moisture and flavour as the meat roasts.

The step that matters

Roasting at a low temperature for a long time. Veal is lean and dries out easily, so a slow oven with regular basting keeps the meat moist while the connective tissue softens gradually.

Swap the parsley

How well each one fits the dish's main ingredients (veal, turkey, flour):

  1. Sagefits better
  2. Turmericfits better
  3. Nutmegfits better
  4. Parsleythe original

Fit is the average pairing score against veal, turkey, flour. Candidates are from the same food group and used in at least 100 recipes.
