Why it works: Sugar and vanilla are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 35,032 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Preheat the oven to 350°F (175°C).
Line a long flat tin with parchment paper, do not grease it.
Make the batter
In a large bowl, beat the egg whites until very stiff.
Sift the flour and sugar together once, then measure.
Add cream of tartar and baking powder to the flour, then sift four times.
Sift the sugar four times, then combine with the flour mixture and sift three more times.
Gently fold the flour and sugar mixture into the beaten egg whites, adding vanilla extract.
Bake and cool
Pour the batter into the prepared pan and bake for 45 minutes without opening the oven for the first 15 minutes.
Once baked, invert the pan on two cups and let it cool completely.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg whites
- Whipped into foam that gives the cake its light, airy structure.
- Sugar
- Sweetens the cake and helps stabilize the whipped egg white foam.
- Flour
- Provides the light structure that sets the cake as the foam bakes.
- Cream of tartar
- Stabilizes the whipped egg whites so the foam holds its volume.
- Baking powder
- Adds a small amount of lift during baking.
The step that matters
Folding the flour and sugar into the egg whites. Folding gently preserves the air trapped in the whipped egg whites. Stirring or deflating the foam makes the cake dense and reduces its rise.
Swap the vanilla
How well each one fits the dish's main ingredients (egg, sugar, flour, cream):
- Raisinfits about as well
- Vanillathe original
- Figfits less well
- Strawberryfits less well
Fit is the average pairing score against egg, sugar, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
