English Walnut Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the milk or water and baking powder.

  5. Gradually add the flour, mixing until just combined.

Make the filling

  1. For the filling, shell and pound the walnuts.

  2. In a saucepan, combine the walnuts, brown sugar, enough milk to moisten, and a lump of butter the size of an egg.

  3. Cook over medium heat until the mixture thickens and can rope off a spoon.

Assemble

  1. Layer the filling on the cake and sprinkle with additional walnuts, repeating until all is used.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air, giving a light, tender crumb and rich flavour.
Eggs
Add structure and richness, binding the batter as they set in the oven.
Flour
Forms the cake's structure once mixed in and baked.
Baking powder
Releases gas in the batter, helping the cake rise and turn light.
English walnuts
Provide the nutty flavour and crunchy texture of the filling.
Brown sugar
Sweetens the filling and helps it thicken into a moist, caramel-like mixture.

The step that matters

Cooking the walnut filling until it thickens. Cook over medium heat until the mixture thickens and can rope off a spoon. Undercooked filling stays runny and soaks into the cake, while overcooking can make it stiff and sticky once cooled. Sugar and milk thicken as water evaporates and the mixture reaches the right concentration.
