Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vinegar
Provides the sharp acidity that preserves and flavours the pickling liquor.
Salmon
The main protein, which firms and absorbs flavour from the hot pickling liquor.
Butter
Adds richness and a smooth mouthfeel to the hot pickling liquor.
Cloves
Contribute warm, aromatic spice flavour to the pickling liquor.

The step that matters

Pour the hot mixture over the cooled salmon. The liquor must be hot when poured but the fish must be cooled, so the flesh is not cooked further or broken up. Storing it cold lets the vinegar and spices penetrate and set the pickle.

Swap the mace

How well each one fits the dish's main ingredients (salmon, vinegar, clove, pepper, allspice, egg, butter):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against salmon, vinegar, clove, pepper, allspice, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
