Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the basin

  1. Preheat the oven to 400°F (200°C).

  2. Butter a deep tin basin and coat it thickly with grated bread crumbs or soaked crackers.

Layer the chowder

  1. Sprinkle pepper and bits of butter over the crumbs, and add chopped parsley if desired.

  2. Layer half of the clams on top, season with pepper, and add more bits of butter.

  3. Add another layer of soaked crackers, followed by the remaining clams and more butter.

  4. Sprinkle pepper over the top and pour in the milk or water.

  5. Finish with a final layer of soaked crackers.

Bake

  1. Cover the basin with a plate and bake for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Clams
Provide the main seafood flavour and bulk of the dish.
Soda biscuits
Soak up liquid and form the layered, starchy body of the chowder.
Butter
Adds richness and fat that carries flavour through the layers.
Milk
Supplies liquid and moisture so the layers steam and soften during baking.

The step that matters

Covering the basin before baking. The covered plate traps steam so the clams cook gently in their own juices and the crackers soften without drying out. Uncovered, the top layer can dry and brown too much.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (butter, bread, pepper, clam, milk, biscuit):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Cinnamonfits less well
  4. Capersfits less well

Fit is the average pairing score against butter, bread, pepper, clam, milk, biscuit. Candidates are from the same food group and used in at least 100 recipes.
