Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meaty bulk and main texture of the hash.
Eggs
Bind the chopped meat together as they set when cooked.
Butter
Adds richness and a smooth, savoury flavour at the end.
Bread crumbs
Absorb moisture and add bulk when there is less veal.

The step that matters

Cook until the eggs are set. Egg proteins firm as they heat. Stop once they are set, because overcooked eggs turn tough and rubbery and dry out the hash.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (veal, egg, butter, bread):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Capersfits about as well
  4. Sagefits less well

Fit is the average pairing score against veal, egg, butter, bread. Candidates are from the same food group and used in at least 100 recipes.
