Chicken Salad

Ingredients

Directions

Prepare the celery

  1. Scrape and wash the celery, reserving the delicate green leaves.

  2. Shred the white part of the celery into thin strips and arrange it in a glass or white china dish to form a nest.

Make the dressing

  1. In a bowl, rub the yolks of the hard-boiled eggs into a smooth paste.

  2. Mix in the mustard and sugar, then gradually stir in the vinegar until well combined.

Assemble and serve

  1. Mince the white meat of the chicken and place it in the nest.

  2. Garnish the edge of the nest with the reserved celery leaves.

  3. Pour the dressing over the chicken just before serving to prevent discoloration.

What each ingredient does

Hard-boiled egg yolks
Rubbed into a smooth paste, they form the emulsified body of the dressing and add richness.
Prepared mustard
Adds sharp flavour and helps bind the dressing together.
Vinegar
Adds acidity that brightens the dressing and balances the rich yolks.
Chicken
Provides the main protein and substance of the salad.
Celery
Shredded into strips, it gives the salad its crisp texture and fresh flavour.

The step that matters

Pour the dressing over the chicken just before serving. Dressing left standing on the chicken can cause discoloration over time, so adding it at the last moment keeps the salad looking fresh.
