Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starchy base that mashes into a soft, fluffy texture.
Butter
Adds fat and richness, giving the mash a smooth, silky mouthfeel.
Hot milk
Adds moisture and creaminess, loosening the mash to a smooth consistency.

The step that matters

Melt the butter in the hot milk and mix until smooth. Adding cold milk or butter cools the potatoes and makes the mash gluey or lumpy. Warm liquid is absorbed evenly, keeping the texture smooth and fluffy.

Swap the potato

How well each one fits the dish's main ingredients (milk, butter, egg, pepper):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against milk, butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
