Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Work the flour into a smooth dough with water.

  2. Cover the basin with a cloth and let the dough rise by the fire.

  3. Knead the dough and divide it into twelve pieces.

  4. Place the pieces in a brisk oven at 400°F (200°C) and bake for about 20 minutes.

  5. Remove the rusks, break them in half, and return them to the oven to crisp on the other side.

  6. Once cold, store them in tin canisters to keep dry.
