What each ingredient does

Raw egg yolks
Emulsify the oil into the mixture, giving the dressing a thick, creamy body.
Hard-boiled egg yolks
Add body and a creamy texture to the dressing.
Fresh sweet oil
Provides fat that, emulsified with the yolks, gives the dressing its richness and body.
Vinegar
Adds acidity that brightens the dressing and sets its tang.
English mustard
Adds sharp flavor and helps stabilize the emulsion.

The step that matters

Slowly pour in the sweet oil while beating. Adding the oil too fast overwhelms the yolks, so they cannot hold the oil in droplets and the dressing breaks into separated oil. Pouring slowly while beating lets the yolk lecithin coat each droplet, producing a thick, stable emulsion.

Swap the mustard

How well each one fits the dish's main ingredients (egg, sugar, vinegar, pepper):

  1. Capsicumfits better
  2. Mustardthe original
  3. Cucumberfits less well
  4. Cabbagefits less well

Fit is the average pairing score against egg, sugar, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
