What each ingredient does

Chicken
Provides the main body of the salad, cooked until tender before chopping.
Hard-boiled eggs
Whites add bulk and texture; mashed yolks form the creamy base of the dressing.
Butter
Adds richness and a smooth, silky mouthfeel to the mashed yolk dressing.
Cider vinegar
Adds acidity that brightens the dressing and balances the richness of the yolks and butter.
Sugar
Balances the sharpness of the vinegar and mustard for a mellow sweet-sour flavour.
Celery and cabbage
Add crisp texture and freshness that contrasts with the soft chicken and eggs.

The step that matters

Mash the yolks fine and combine them fully with the dressing. Fine-mashed yolks blend into a smooth emulsion-like dressing that coats the other ingredients evenly. Lumps of yolk leave dry pockets and uneven seasoning, and thorough mixing spreads the acidity and seasoning through the whole salad.

Swap the cabbage

How well each one fits the dish's main ingredients (chicken, egg, celery, butter, sugar, mustard, pepper):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Chivefits better
  4. Cabbagethe original

Fit is the average pairing score against chicken, egg, celery, butter, sugar, mustard, pepper. Candidates are from the same food group and used in at least 100 recipes.
