Pickled Mushrooms

Ingredients

Directions

Prepare

  1. Rub the mushrooms with a piece of flannel and salt to remove the skin, and cut off the stalks.

  2. If the mushrooms are very large, remove the red inside and discard any black ones.

Cook and pickle

  1. Place the mushrooms in a stewpan, sprinkle with salt, mace, and pepper, and shake well over a clear fire until the liquid flows.

  2. Continue heating until the liquid dries up, then add enough vinegar to cover the mushrooms.

  3. Let it simmer for one minute, then store in stone jars.

  4. Once cooled, seal with bladder and keep in a dry place.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young button mushrooms
Form the main body of the pickle, becoming tender and firm as they cook in vinegar.
Vinegar
Acidifies and preserves the mushrooms, keeping them stable for storage.
Mace
Adds a warm, aromatic spice flavour to the pickled mushrooms.
Ground pepper
Adds a sharp, pungent note that seasons the mushrooms.

The step that matters

Driving off the liquid before adding vinegar. The mushrooms must be heated until their released liquid evaporates before vinegar is added. Leftover moisture dilutes the vinegar and can let the pickle spoil in storage.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, vinegar, pepper):

  1. Thymefits better
  2. Tarragonfits better
  3. Garlicfits better
  4. Macethe original
