Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the basin

  1. Preheat the oven to 400°F (200°C).

  2. Rub the bottom and sides of a basin with a bit of butter.

  3. Line the basin with the sliced bread or rolls.

Fill and press

  1. Fill the basin with the chopped apples, adding bits of butter and sugar between layers.

  2. Grate nutmeg over the apples.

  3. Soak additional slices of bread or rolls in water and place them on top of the apples.

  4. Cover with a plate and weigh it down to press the bread onto the apples.

Bake and serve

  1. Bake for 2 hours, then turn it out onto a serving plate.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread or rolls
Forms the outer shell that holds the soft apple filling together while baking.
Tart apples
Provide the bulk of the filling, and their tartness balances the sugar and butter.
Butter
Adds richness and helps the bread brown and crisp at the edges.
Sugar
Sweetens the apples and helps them caramelize slightly as they bake.

The step that matters

Pressing the bread onto the apples. Weighting the bread down keeps the layers compact so the charlotte holds its shape when turned out. Loose layers can collapse or leave gaps.

Swap the apple

How well each one fits the dish's main ingredients (wheat, butter, sugar, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Coconutfits better
  4. Applethe original

Fit is the average pairing score against wheat, butter, sugar, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
