Why it works: Milk and vanilla are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Tapioca Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the pudding base

  1. Wash the tapioca and let it stew gently in the milk on the stove for 15 minutes, stirring occasionally.

  2. Let the mixture cool, then mix in the butter, sugar, and well-beaten eggs, adding the flavoring.

Bake

  1. Butter a pie dish and line the edges with puff pastry.

  2. Pour the pudding mixture into the dish and bake at 350°F (175°C) for 1 hour.

  3. If boiling, add more tapioca and boil in a buttered basin for 1.5 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells in the hot milk and thickens the pudding into a soft, set texture.
Eggs
Bind the custard and help it set firmly as it bakes.
Milk
Provides the liquid that the tapioca absorbs and the base of the custard.
Butter
Adds richness and a smooth, tender mouthfeel to the pudding.
Sugar
Adds sweetness and contributes to browning at the pudding's surface.

The step that matters

Cooling before adding the eggs. Eggs scramble when added to very hot liquid. Letting the tapioca mixture cool first lets the eggs blend in smoothly and set evenly rather than curdling.
