Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Forms the main body of the dish, which is set and firmed by boiling and then cooling in the pickle.
Vinegar
Provides acidity that sharpens the flavour and helps preserve the fish in the pickle.
Butter
Adds richness and a smooth, rounded mouthfeel to the pickling liquid.
Cloves
Contribute warm, aromatic spice flavour to the pickling liquid.

The step that matters

Skim the pickle clear. Heating the liquid to a boil brings foam and impurities to the surface. Skimming them off keeps the pickle clear and stops residue from clouding the liquid or spoiling the fish's surface.

Swap the mace

How well each one fits the dish's main ingredients (salmon, vinegar, clove, pepper, allspice, egg, butter):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against salmon, vinegar, clove, pepper, allspice, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
