Directions

Prepare the chops

  1. Cut veal chops about 1 inch thick.

  2. Beat them flat with a rolling pin.

  3. Pour boiling water over the chops. Set them over the fire for 5 minutes.

  4. Remove the chops. Wipe them dry.

Bread and fry

  1. Dip each chop first into the beaten egg. Dip each chop into rolled crackers.

  2. Fry the chops in hot lard or beef drippings.

  3. Broil the chops over a clear fire.

  4. Place the chops on a buttered steak dish.

  5. Turn them carefully until well done.

Make the batter and gravy

  1. Dip the chops into a batter made of 1 beaten egg, ½ teacup milk, and enough wheat flour to thicken.

  2. Fry the chops in hot lard or beef fat until golden brown on both sides.

  3. Add 1 tablespoon of fat to the pan after frying.

  4. Make a thin batter with 1 tablespoon of wheat flour and cold water.

  5. Stir the batter into the hot fat until cooked and brown.

What each ingredient does

Veal chops
Provide the meat that is flattened, seasoned, coated and fried.
Beaten egg
Binds the cracker crumbs or batter to the surface of the chops.
Rolled crackers
Form a crisp, browned coating on the outside of the chops.
Wheat flour
Thickens the batter and the pan mixture into a smooth sauce.
Lard or beef drippings
Conducts heat for frying and adds richness and browning to the surface.

The step that matters

Fry the chops in hot fat until golden brown on both sides. Fat must be hot enough to brown the coating quickly; a cool pan lets the coating soak up grease and turn soggy before the meat cooks through.
