Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Coal roast veal
Provides the main body and meaty texture of the hash.
Eggs
Set when heated, binding the chopped veal into a cohesive mass.
Butter
Adds richness and a silky mouthfeel to the finished hash.
Stale bread-crumbs
Absorb moisture and help thicken the hash when added.

The step that matters

Cooking the eggs after breaking them in. Eggs set quickly with heat, so overcooking them turns them dry and rubbery. Stopping once they are just set keeps the hash tender and moist.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (veal, egg, butter, bread):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Capersfits about as well
  4. Sagefits less well

Fit is the average pairing score against veal, egg, butter, bread. Candidates are from the same food group and used in at least 100 recipes.
