Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

To Roast a Leg of Pork

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pork

  1. Score the skin of the leg of pork in narrow strips, forming diamonds if desired.

  2. Rub powdered sage into the scored skin.

  3. Lift the skin at the knuckle and stuff it with minced onion, sage, bread crumbs, pepper, salt, and beaten egg yolk.

  4. Secure the skin with a buttered string or skewers.

  5. Make deep incisions in the large end of the leg and stuff them with the filling, pressing it in firmly.

Roast and baste

  1. Brush the skin with sweet oil to achieve a crisp, brown finish.

  2. Roast the leg of pork at 400°F (200°C) for 3 to 4 hours, basting regularly with sweet oil or fresh butter.

  3. Avoid basting with the drippings to keep the skin from becoming tough.

Finish and serve

  1. Skim the fat from the gravy and thicken it with a little flour.

  2. Serve the roast leg of pork with apple sauce, mashed potatoes, and mashed turnips.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of pork
Forms the main body of the roast, cooking slowly to tender meat under crisp skin.
Bread crumbs
Absorb juices from the onion and egg, keeping the stuffing moist and binding it together.
Beaten egg yolk
Binds the stuffing so it holds together while roasting.
Minced onion
Adds aromatic flavor that permeates the meat as it roasts.
Flour
Thickens the drippings into a smooth gravy.

The step that matters

Avoid basting with the drippings. The record warns that drippings would make the skin tough, so basting should use only the oil or butter to keep the skin crisp and tender.

Swap the onion

How well each one fits the dish's main ingredients (pork, sage, bread, pepper, egg, butter, flour):

  1. Capsicumfits better
  2. Shallotfits better
