Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Coral and spawn
Gives the sauce its rich lobster flavour and a deep orange colour.
Sweet butter
Provides fat that makes the sauce rich and silky as it melts.
Water or vinegar
Thins the melted butter; vinegar adds a slight acidity to balance the richness.
Made mustard
Adds sharpness and a little emulsifying help to hold the butter sauce together.

The step that matters

Stir until smooth. Melted butter and liquid separate easily, so the sauce can break and look greasy if it is not stirred well and kept warm enough to stay emulsified.

Swap the mustard

How well each one fits the dish's main ingredients (lobster, butter, vinegar, pepper, meat):

  1. Mustardthe original
