What each ingredient does

Raw egg yolks
Emulsify the oil into the dressing and thicken it as they are beaten.
Hard-boiled egg yolks
Add body and a smooth, creamy texture to the dressing.
Fresh sweet oil
Provides fat and richness, forming the body of the dressing when beaten in.
Vinegar
Adds acidity that brightens the flavour and sets the final consistency.

The step that matters

Slowly pour in the oil while beating. Adding oil too fast, before the yolks can hold it, makes the emulsion break so the dressing separates instead of thickening. Pouring slowly in a thin stream lets each drop disperse into the yolks.

Swap the mustard

How well each one fits the dish's main ingredients (egg, sugar, vinegar, pepper):

  1. Capsicumfits better
  2. Mustardthe original
  3. Cucumberfits less well
  4. Cabbagefits less well

Fit is the average pairing score against egg, sugar, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
