Directions

In a pot, combine salt and water, then add the green tomatoes.
Cover the pot and heat until the water boils.
Remove the pot from heat and transfer the tomatoes to a basin of cold water.
In a separate bowl, mix enough vinegar to cover the tomatoes with whole pepper and mustard seed.
Once the tomatoes are cold, cut each in half and remove the seeds.
Wipe the insides of the tomatoes dry with a cloth.
Place the tomatoes in glass jars and cover them with the vinegar mixture.
Seal the jars with a close-fitting lid.
